I think the defensive and contact strategy is the winning one, to group multiple hits score some runs. You could go another route with the pitcher as well but I find Boo holds up well enough. Wario could be replaced by Petey or Bowser, but I just prefer Wario's normal bat shape. Toadette and Wario are where you can flex a little. Red Toad is extremely underrated, hits both power and contact. The entire infield has a strong throw to first because of the chemistry to peach. Any fly ball is an out, same with Birdo in right, and he has a strong throw. Yoshi is a defensive animal in CF if you can time his tongue catch. I have googled around for an ideal team but haven't really agreed much. It usually ends with a fair game and a lot of fun. We pick our teams by going one by one, schoolyard style. What I like to do is play a friend, select Mario stadium (no gimmicks) and turn off star chances. This game still holds up very well and is an incredibly deep baseball game for its simple controls.
